I have a question:1) How the potatoes should look after grating? Is it the same to mash them?2)Do you cook them till they're ready like cooked potatoes or less because afterwards your fry them?

The potatoes shouldn't be too soft, the shape of the grated bits should remain - if you would grate them straight away they would go mashy in the pan - that's why you have to wait at least 24 hours...
